Dragons, huh...
One card that will be of great use to you is Buster Blader. 500 extra attack points for every dragon they have in their field or graveyard, on top of the 2600 attack points he has to begin with. Unfortunately, he's a level 7 monster, but there are methods to get him on the field easily. He has no effect other than the point gained, so he can be special summoned from the graveyard as many times as you can. It also outplays both Blue Eyes Shining and Red eyes Darkness. Given that there is a requirement for at least one dragon (blue-eyes ultimate) to be in the grave for Blue Eyes Shining to be summoned, plus the Shining Dragon itself makes the lowest possible match-up in attack points 3300 for Blue eyes Shining and 3600 For Buster Blader. The same applies to Red Eyes Darkness, but as it is weaker than Blader to begin with, your advantage is bigger.
As for the rest of your deck, I would focus on the destruction of cards before they reach the field. If he's running both Blue Eyes, Red Eyes and Cyberdark in the same deck, he may have trouble getting a decent deck to work with all three, given the amount of support cards there are for Blue eyes and Red eyes.
The cyberdark cards are probably the biggest threat in the deck, provided he manages to get the fusion of the three onto the field. If that happens, he could have a monster with up to 5500 attack points, provided Blue Eyes Ultimate is equipped to cyberdark dragon. The weakest point in that is that Ultimate is treated as an equip card, and can still be destroyed by cards like Mystical Space Typhoon, Heavy Storm or dust tornado.
Another suggestion is to put 3 of the marauding Captain card in your deck. If two of them are in your hand at the same time, you can use one's effect to special summon the other. When two of them are on the field, neither of them, or any other warrior type monster can be selected as an attack target.
I've probably got a couple more ideas, but I think that should give you a decent idea of how to combat a dragon deck.
