It's a fan term that means "putting characters/people together in a relationship". Mostly in writing/pictures.

It means you think certain people (usually two people) would be great together (usually as a romantic couple, but friend ships exist and are lovely ).
Your ships may also be called your OTPs. One True Pairings. Don't be misled, though. It's nearly impossible for most people to have only one ship. Therefore you might only call your favorite ship your OTP. And yes, we make MANY boat jokes.
If a ship is officially made real on the show, in the book, whatever the thing is, it is considered "canon."
