I always end up with a shit ton of healing potions that I never use anyway, so healers often don't have much use on my team unless they do mass healing.

Not if you do it right! There are plenty of trees available that let you essentially heal for every hit you do which works based off of your strength rather than your magic skill. So there isn't really much splitting. You just choose whether you want to be a "I PUNCH YO FACE AND HEAL MY MAN" sort of healer or the kind that sits in the background watching health bars.
