You can substitute mashed banana or applesauce, amongst other options, to avoid using eggs in baking.

We're in Denver now!
It's so annoying because we got lost trying to find our hotel, so we ended up staying in a random one...
The silver lining is that it's a lot nicer than the hotel we were originally planning to stay at.

Still, it's super annoying that we are so far off course right now.

Vegetarians simply cannot eat meat. Vegans cannot eat anything that doth come from an animal.

Therefore, no eggs for vegans, but yes eggs for vegetarians.

Did you get to see anything special before you left Denver?
Are you taking I-25 south or are you going west on I-70 to get to Vegas?
I hope you have reservations in Vegas because it can be difficult to get a room on the weekend without reservations.

We're going on I-70, going through the mountains!

We probably won't stay directly in Vegas, but somewhere nearby, so hopefully we can find a room! We have to be there by Monday because our apartment building's office is closed on Sundays, so we won't have the key to get in if we arrive early.
We were thinking of stopping half way between Denver and Vegas, perhaps somewhere in Utah, but it's supposed to snow in Utah, so we don't know what we're going to do yet...
For now, we just drive on!

Occasionally, I get a signal out here, so I can come on Mene with my iPad!

The drive through the mountains on I-70, westward, really isn't stressful or scary.
The views are awesome though!
I hope Ava's trip through the mountains is much better than she anticipated.

Utah...that long stretch of highway with nothing for miles...no trees, no buildings, no gas...
Was it daylight still while you were driving in Utah? The scenery there is pretty cool!
