surely for Kwanzaa it should be Jollof rice? but I don't know, because its an American celebration, not African, so its more likely to be African American dishes than African dishes. all I know is fried chicken and collared greens. enlighten me

African American food varies from place to place.
My mom's family is Creole, so naturally it's a lot of gumbo, shrimp and ettoufee.
But yeah, soul food is mostly fried chicken, cornbread, collard greens. But that's not exclusive to African Americans, just exclusive to the south.
But chit lins are African American slave food. :o
It was the parts of the pig that was deemed too dirty to eat so the slaves would take it and cook it an eat it.

Okay....I'm confused!
Kwanzaa is an AMERICAN celebration?
Is that because Africans didn't celebrate it till they came to America?
Is there an African celebration that isn't influenced by American traditions?
I rarely get to eat real soul food...never having lived in south....but I sure would fill my belly with some if I got half the chance! Lol!

Kwanzaa is a celebration of African heritage in African-American culture, but it is also celebrated in other nations of the Western African diaspora in the Americas (Guyana in South America comes to mind). I know of all the dishes you mentioned but I'm not too sure of ettouffee, isn't that like fish over rice, or something like that?

Menelaus is right; Kwanzaa was invented by African Americans to celebrate African heritage. It's not an African holiday. :)
It has a lot to do with heritage though and it doesn't have to take the place of Christmas or Hanukkah. Kwanzaa has candles you light each night to represent things like, family, strength, power, love, etc and the family will spend each night places something in front of the candles (usually of African influence) that shows relation to what the night's candle signifies.
That's all I remember from my Kwanzaa celebration I did when I was 15.
Then I also remember watching an episode about Kwanzaa on the Proud Family. (Omg does anyone even remember that show!?)
