I've never made enchiladas with the canned sauces before. Scott saw the green and picked it up a while ago wanting me to make some, buuut I'd never done it before! And there wasn't a recipe posted on the can (wtf?)and I've still yet to look one up. I mean really, how hard can it be? I'm just stupid lazy today. :/

Dillon and I do it with chicken breast but I'd assume it is pretty easy to do with pork or beef of some sort.... Not sure what kind mind you so don't ask... ANY HOO... Ours aren't "traditional Mexican" since they use flour tortillas and a can of cream of celery. So they aren't so....... DRY...
It is pretty easy though... Cook up and spice (pepper garlic salt) meat of choice I boil my meat MOST of the time so I add bullion (sp?) to the water it is boiling in... Grate Cheddar cheese dice onion... Put meat and about a cup of grated cheese and onion in a mixing bowl. Add can of cream celery (do not add water) and mix. In an ungreased pan 13X9 I think is what we use... You have a choice. Either A. Add a Tsp or so of vegetable oil and or some of the canned sauce. B. Just the oil or just the sauce or C. leave untouched... The more sauce and oil you use the wetter the enchiladas I prefer just putting sauce over the enchiladas cause it kind of makes them crunchy... ANYHOO... So you spread about a tablespoon of the filling into the flour tortilla and roll it like a taquito (can't spell Spanish words <.<) set in pan against the edge keep doing this until the tortillas are gone or the pan is full to your liking. Then distribute a can of sauce on top and add the rest of the cheese (since I neglected to mention I use between a 1lb and 2lbs on this dish) bake in the oven at 350F for about 25 minutes. Everything should be cooked already so this is just to melt cheese and stuff... Then serve. We've also used just cheese and corn tortillas for this recipe though it used a LOT more cheese then we wanted... But it turned out more like a pie cause we couldn't roll the corn tortillas without them breaking.

Yesterday was soooo beautiful! It was like 75 out and felt great, today we're in the 40/50's. I wish our weather would make up it's mind...and I hope it decides on warm!

I'm jealous of your semi constant weather. Mine needs to take a hint. I heard through the grapevine that it's supposed to rain all week. Not really looking forward to that...I'm not the biggest rain fan when it's cold. Warm rain, I'm all for, cold rain can gtfo.

I am liking warmer days though I am not liking that We are going to have split and separated days off this week :/ Dillon called off today and today was total waste of time >.>;; and then he's off St. Patties for our anniversary but I'm not sure what is happening that day either :/ So he will be working the weekend to make up the hours which freakin sucks...

I'd say that's one thing I like about the Coast Guard: A steady schedule. but that's not always true. When he was on days he had to work a weekend day about twice a month. Nights is nice once in a while, and it's nice because he gets to have normalish sleeping hours but it still sucks in the long run. But I think I'd view any job that way. I don't want him taken away from me at all. /crazy obsessive

I am the same way. This is semi our choice: Dillon requested St. Patties off... but doesn't have any vacation or sick pay... He never will either at this job. And yesterday he called off to help with all the CRAP that was going on... So that is two days this week without pay.... And I can't even count the overtime day he had last week :( because he was actually sick the week before and called off that day :/ so yeah he has to work weekends this weekend :/

That sucks. ): And it sucks even more that he'll never get vacation/sick days. We're lucky in that case, Scott gets 2.5 days a month and they add up over time. he never really takes leave unless I ask him to, so he has like 45 days saved up now. He's taking off a week next month so that we can work on the house/prepare for the move. I'm looking forward to that. It will be so nice to have him home for an extended period of time. We're hoping his moms come down then too. They're super helpful when it comes to household remodeling stuff, so hopefully we'll be able to get a lot done while they're here. I also kinda wanna go up to NY and visit my baby daddies and my sister. (: Here's hoping we can pull it off!

See I know we aren't planning for a move but we are planning to be doing so big stuff to the house.... :/ It isn't cool that it is impossible to get any kind of paid time off... But most jobs are becoming more and more like that...:(

With the job market sucking so bad employers can get away with less time off, less pay etc. It doesn't hurt them because people know they would have a hard time finding another job should they choose to quit etc. It sucks, but it's the truth.
I can't wait for the economy to pick up again. Then they'll have to start making their company more desirable than not because when there are more jobs out there for skilled workers, well they'll have a much harder time getting away with treating people like shit. >:(

I think a lot of it is our own fault. Meaning the American public.... :/ We never stand up for our own rights and we allow the companies that are the biggest to rule supreme. Comcast, Dish Network, Walmart, Target etc... We are so quick to turn a blind eye on the fact that these companies dominate our spending habits, but give us nothing back or worse give jobs etc to other countries where they can treat the employees even worse... It is sick. But there are times that I wonder if I talk and never get heard... I do because I am only one voice. :/ We need to stand together and stop acting like standing together is such a hindrance to our being. For example, I joined a thing that on FB trying to provoke people to try to go two or three weeks without buying gas to protest that gas prices are so high..... It isn't an impossible endeavorer people are just lazy and stupid about the way the do thing. I didn't get Dillon on board with me so we have already faltered only a week in... We wound up going to the grocery store 2-3 times last week because we neglected to write a list. Dillon took the long ways too and from Michael's school and we neglected to fix Dillon's bike before it started... :/ So yeah... I am a prime example...

I read about this a while ago like two years back when people were trying to band together and not buy gas, as it turned out the companies raised the prices to make up for the people not buying and so when the "boycott" ended it was just that much more expensive. And they continued driving up the prices through the summer, so when this one came out, I'm flat out ignoring it. Not that I'm going out to buy gas every chance I get, just that I'm not intentionally not buying gas because everyone else is doing it.
Instead I'm being smart about when I'm buying gas. When my tank is at 1/2 and early in the morning when the temperature is lower that way there are less fumes in both the tank and the pump and so I get my monies worth of the gas. *shrugs*

That was just an example... :/ I didn't know about any boycotting a couple years ago. But it is still a lot of apathy on our part.... I hate to use my mom as an example cause I think she blows things a little TOO far out of proportion. But she says we should have a revolution. We are almost as bad to our workers now as we were to them before unions and things like that were put into place. :/ Minus child labor, we are getting close. Putting people KNOWINGLY on shotty equipment. Not valuing life at all and treating it like it is nothing. The attitude of "Complain we'll fire you and hire someone for cheaper." is EXACTLY the same thought processes... Dillon was told if he brought up the legality of his workplace working some of it's employees 10+ days straight MANDATORY... He would be fired on the spot... Our whole system is on the downward slope and a lot of it is on us. We have things at our disposal to correct these kind of problems... Osha, Labor Unions etc. That is what the industrial revolution was about.... But employers make us so scared now that we are going to get fired for exercising our rights... It is just wrong... So in a lot of ways I agree with my mom...
As far as gas goes... If I waited until it was half full I'd be buying gas 2-3 times a week... Rather then my usually once a week when it is at 1/4... So I'd be spending the same or more anyhow. And I always buy gas in the morning that is when I am out of the house the most ><;

If I'm going out, it's generally in the afternoon with the kiddos. So I'll fill up the tank when I take them to school in the mornings, and the twins provided it's not raining/crazy windy we just walk.
I do agree though, we're letting companies crush us with unnecessary demands on our time and health. It's not safe, and they make us feel like there's nothing we can do about it. All companies should have some type of anonymous "tell us how we can improve" box IMO, so that they can see if their employees are happy or not. Happy employees make more productive employees, which makes for a more profitable company. I don't know if a revolution is in order, because some companies aren't shitting on their employees, but for the most part, a boycott wouldn't hurt. having more labor unions to stick up for the little guy/more companies participating in the unions would help. At least, in some places. But those unions also take a cut of the paycheck from the employee.
I'm thinking a federal job is in order. I should work for the post office. ;D They get good pay and guaranteed sundays off. xD I wonder if ours is hiring...

Anyhow what I said in a nut shell is that I agree, like I said my mom blows things out of proportion... :/ but yeah.... I know companies in my town alone that will fire you on the spot for mention of a union (IE walmart and target)... I also know companies that HAVE a union and will still fire anyone who joins it... Something is wrong with the system... We need it fixed!
I have been trying to get Dillon to apply at the post office I think he's really enjoy being a letter carrier... But does he listen NOoooo. I want to work for WIC really bad.... Not entirely sure why but I do.

I think you would do quite well working for WIC. But I also think you might get annoyed at the number of people who just plain don't get that it's there to help and not completely feed their family. I've heard shouting matches in our WIC office because some woman thought she was entitled to far more than they were giving her. IMO- free stuff is free, don't complain. I like getting free milk/egg/cheese/juice etc. It's helpful to me, but I know I shouldn't feel entitled to it.

I'm open-minded enough to realize that one worker doesn't represent the entire organization, so what I'm about to say (hopefully) doesn't apply to many others. We have one worker that handles our state's county. I sort of lost faith when I left the office on three separate occasions wanting to cry due to feeling like an inept parent.
It really bothers me that the formula-fed charts (at least here) are used to assess a child's health. I'd been scolded more than once for Terra being "under weight" though developmentally she's been advanced. I bit my tongue when she told me to give her formula before breast because "obviously my milk doesn't have enough nutrition". :stare:
Then when her weight went up, the whole, "I bet you feel so much better and more secure now that she's up on the charts!" made me further withhold my sarcasm. I wanted to say, "Why yes, I feel GREAT that I have a low milk supply and my daughter's not thriving because of it. I LOVE giving her a bottle of crappy formula to compensate."
Ugh, sorry. That was an unnecessary rant. I just wish with WIC's encouragement for breastfeeding, everyone working there could hold, um, encouragement? Or try and look at a child as more than a number on the scale? We were told to promptly get to a pediatrician because she could have some metabolic disorder, and the pediatrician sort of looked at us like we were foolish.
That was justification, at least. :/
Next WIC appointment is early April. I'm sure it will go fine now that my girl's filling out more. I'll explode if I get told she's too fat now. The same worker told my friend that her daughter was far overweight and needed a diet. She's 3 and slender as a rail, just very muscular.
It's worth saying again that I don't feel all of WIC is like this.
