3 tb Margarine
Sugar, powdered

Combine blueberries, maple syrup and orange peel in a
small saucepan. Dissolve cornstarch in water; add to
blueberry mixture. Cook and stir until mixture boils;
reduce heat and simmer 1 minute or until mixture
thickens.

Combine eggs, milk, vanilla and nutmeg; mix well. Dip
each slice of bread into egg mixture. Cook each slice
in small amount of butter in skillet or on griddle
about 2 minutes or until golden brown on each side.

Place one slice on each individual plate, spread with
3 tablespoons blueberry mixture, top with second slice
and 1 tablespoon blueberry mixture. Sprinkle lightly
with powdered sugar.


BLUEBERRY SAUSAGE BREAKFAST TREAT

3/4 lb Sausage, pork
2 c Flour
1 t Baking powder
1/2 ts Baking soda
1/2 c Butter
1/2 c Sugar
1/4 c Sugar, brown
2 Eggs
8 oz Sour cream
1 c Blueberries
1/2 c Pecans, chopped

Day before: Cook sausage and drain well. Stir
together flour, baking powder, and baking soda. In
large mixing bowl, beat butter until fluffy. Add
sugars and beat until well-blended. Add eggs, one at a
time, beating well after each. Alternate adding flour
mixture and sour cream to creamed ingredients; mix
well. Fold in sausage and berries. Pour batter into
ungreased 13“x9”x2? baking pan. Sprinkle pecans on
top. Refrigerate overnight.

Preheat oven to 350. Bake 35-40 minutes, until done.
Cool on wire rack.

With two young kids, I didn't want to
use chopped nuts, so I sprinkled raw oats on top.
Then, I didn't have a 13“x9? pan, so used two
8”x3-3/4? pans. And my oven was broken so I used my
toaster oven and baked one pan 35 minutes at 350. The
batter is so thick it's very hard to work with; I need
to add more liquid next time. It's also too rich to
bake easily, think I'll replace some sour cream with
water or milk.

Directions
Preheat the oven to 350 degrees.
Spread the crushed potato chips in a shallow dish. Beat together the egg and milk in a shallow bowl. Dip the chicken cubes into the egg mixture and then dredge them in the chips. Place the chicken nuggets on a baking sheet and drizzle with melted butter. Bake for 15 to 18 minutes, or until golden brown. The chicken nuggets can be frozen after baking. Serve with your favorite sauce, such as honey mustard or ranch dressing.


Honey Mustard Ingredients:
3/4 cup mayonnaise
3 tablespoons honey
2 tablespoons yellow mustard
1 tablespoon lemon juice or juice from 1/2 lemon
Horseradish, to taste
2 tablespoons orange juice (more or less as needed)

Directions:
Combine all ingredients except orange juice; stir well. Thin to pouring consistency for dressing or dipping consistency for dips with orange juice. Cover and chill for 2 or 3 hours.

Yield: 1 1/4 cups

Ingredients:
3 large baking potatoes
1/2 cup mayonnaise
1/2 teaspoon hot sauce
1/4 teaspoon onion salt
1/2 teaspoon House Seasoning, recipe follows
1/8 teaspoon black pepper
2 cups cornbread dressing mix

Directions:
Preheat the oven to 375 degrees F.
Wash the potatoes and cut each into 6 thick wedges. Mix the mayonnaise with the hot sauce, onion salt, House Seasoning and pepper. Coat the potato wedges with the mayonnaise mixture and roll them in the dressing mix. Place in a greased baking dish and bake for 45 to 50 minutes, or until the potatoes are tender. Serve with your favorite dip.


House Seasoning Ingredients::
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Directions:
Mix ingredients together and store in an airtight container for up to 6 months.

Ingredients:
Apple Strudel:
1/4 cup bourbon or apple juice
1/2 cup golden raisins
2 to 3 Granny Smith apples (about 1 pound), peeled, cored, halved, and thinly sliced
1/2 lemon, juiced
1 tablespoon lemon zest, finely chopped
1 teaspoon ground cinnamon, plus more for sprinkling
1/2 cup brown sugar, packed
1/2 cup crushed shortbread cookies
1/4 cup chopped pecans
2 tablespoons butter, cut into pieces
5 sheets phyllo dough from 1 pound package of frozen dough
2 tablespoons butter, melted, for brushing phyllo sheets, plus more if needed
1 tablespoon granulated sugar
Confectioners' sugar
Caramel sauce, purchased

Glaze:
2 cups confectioners' sugar
3 1/2 tablespoons milk

Directions:
For the Strudel:
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
In a small bowl, pour the bourbon or apple juice over the raisins and microwave on high for 45 seconds. Let sit for 15 minutes.

Combine the raisins, apples, lemon juice, lemon zest, cinnamon, brown sugar, cookie crumbs, pecans, and butter in a large bowl.

Remove the phyllo dough from the box, unfold, and cover with a damp towel. Place 1 sheet of phyllo on the work surface and brush lightly with melted butter. Repeat with the remaining sheets, brushing each with melted butter, stacking when done, being sure to keep the unbuttered phyllo covered.

Place the apple mixture on the nearest third of the phyllo stack, being sure to leave a 2-inch border. Gently lift the bottom edge of the phyllo stack to cover the filling and fold the side edges over. Continue to roll the stack away from you until the filling is completely sealed in and the seam is on the bottom. Transfer to the prepared baking sheet. Brush the top with melted butter and sprinkle with granulated sugar.

Bake for 30 minutes, until golden brown. Pour over the glaze and sprinkle with cinnamon and confectioners' sugar. Pass warm caramel sauce, to drizzle over the strudel.

For the Glaze:
Mix ingredients thoroughly.

*Cook's Note: If too thick add a little bit of milk. If too thin add a little bit of confectioners' sugar

Ingredients:
7 ounces chocolate cookie crumbs, plus more for garnish
2 tablespoons butter, melted
3 (1-quart) containers coffee ice cream
Chocolate sauce
Chopped nuts (optional)

Directions:
Using a large mixing bowl, place cookie crumbs and melted butter. Mix until the ingredients are well blended and moist. Keep mixture at room temperature until needed for pie shells.

Lightly spray 2 pie tins with vegetable oil. Place the prepared crust into the pie tins and press firmly on the bottom and sides of each tin, forming a smooth and even thickness approximately 1/8-inch thick. Use a ladle to even out the crusts. Place piecrusts in freezer before ice cream can be placed into crusts.
Equally portion the ice cream into the pie shells. Mound the ice cream to create a 3-inch high dome. Use a glove and napkin to help with this process. Place pies on a sheet pan and place in the freezer for approximately 6 hours or more.
To serve, Drizzle with chocolate sauce and sprinkle with more cookie crumbs and chopped nuts, if desired.

1 can of pure pumpkin
2 c. sugar
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon

1 c. oil
2 tsp. vanilla
4 c. flour
12 oz pkg. chocolate chips

Directions:
Preheat oven to 350 degrees.

Mix the first five ingredients in a large bowl. Mix the liquids together before adding to dry ingredients.

Slowly add the flour one cup at a time stirring very well between cups of flour. Add chocolate chips.

Drop onto parchment paper or greased cookie sheets and bake for about 10 minutes or until golden brown. Place onto wire rack and cool.

Makes about 2-to-3 dozen.

We are playing it safe. When in doubt... quote. I have also discovered that you should type it first. Post then go back and quote it. That's what I did... as a precaution.


I lost over 800 pieces of gold because I didn't quote everything. I was so close to buying my outfit, too. The grand total is 3650 pieces of gold. But to get the first 3 items still need 1/3 of the grand total (1050). I was so close to buying the first two items before we were repremended of our mistakes and the gold was taken away.
