Asian Egg Omelet:
4 eggs
4 oz green bell pepper (any color works)
4 oz shredded carrots
1/2 tsp pepper
3 oz shredded cheese
1 Tbs Huy Fong chili garlic sauce
1/2 tsp sriracha
butter
Preheat large pan on stove with butter. Crack four eggs into bowl. Add carrot, sriracha, garlic sauce, and pepper, and whisk. Pour in pan when butter is melted. Cook omelet however you will. Add bell peppers and cheese, fold omelet over and cool until melted.
It's delicious and has a kick without being spicy. The carrots are better cooked into the omelet than added like the bell peppers. I'm just not sure if I like it better with ketchup or ranch. I would have tried tabasco, but I had none...
